3 x whole mandarins
1 cup caster sugar
1 cup desiccated coconut
1/2 cup cocoa power
2 tsp baking powder
2 cups leftover rice (cooked)
6 eggs
1 tsp vanilla

Steps
Prepare a 12 cup muffin tray with oil/butter so the mixture doesn't stick. If you'd like to use muffin wraps, consider a recyclable option like natural unbleached paper. Preheat oven to 180 degrees fan forced.
Cook the whole Mandarins in a pot of boiling water for 30 minutes on the stove, then drain.
Place the boiled mandarins (whole) into a blender with sugar, coconut, cocoa, baking powder, leftover cooked rice, eggs, vanilla and leftover chocolate.
Blend the mixture until all ingredients are well-combined. Scoop mixture evenly into your muffin tray.
Bake in over for 25 minutes or until cooked. Sprinkle with cocoa powder or icing sugar to serve.
