Easter chocolate leftovers? Try this recipe!

Ingredients

  • 3 x whole mandarins
  • 1 cup caster sugar
  • 1 cup desiccated coconut
  • 1/2 cup cocoa power
  • 2 tsp baking powder
  • 2 cups leftover rice (cooked)
  • 6 eggs
  • 1 tsp vanilla 
  • Leftover chocolate 

Steps

  1. Prepare a 12 cup muffin tray with oil/butter so the mixture doesn't stick. If you'd like to use muffin wraps, consider a recyclable option like natural unbleached paper. Preheat oven to 180 degrees fan forced.

  2. Cook the whole Mandarins in a pot of boiling water for 30 minutes on the stove, then drain. 

  3. Place the boiled mandarins (whole) into a blender with sugar, coconut, cocoa, baking powder, leftover cooked rice, eggs, vanilla and leftover chocolate.

  4. Blend the mixture until all ingredients are well-combined. Scoop mixture evenly into your muffin tray.

  5. Bake in over for 25 minutes or until cooked. Sprinkle with cocoa powder or icing sugar to serve.
